Good old fashioned mac and cheese

INGREDIENTS

  •  3 cups macaroni or other short pasta
  •  2 1/2 cups of milk
  •  1/4 cup flour
  •  2 teaspoons of Dijon mustard
  •  1/2 tsp salt
  •  1 pinch of cayenne pepper
  •  1 1/2 cup Emmental or Gouda cheese, grated
  •  1 1/2 cups sharp cheddar cheese, grated
  •  1/2 cup grated parmesan
  •  1/4 cup light cream cheese
  •  1 chopped green onion
  •  6 onion crackers (Melba type), crushed

PREPERATION

1. In a pot of salted boil7Uing water, cook the pasta for 8 to 10 minutes or until al dente. Drain and reserve.
